Lentil Pilaf is delicious hot or cold. A great source of fibre, potassium, iron and protein.
1 x 500 grams Green Lentils
50g Long Grain Rice
1-2 Large Onion-Sliced
2 Table Spoon Cooking Oil/ Olive Oil
1 Lemon Squeezed
Wash lentils with cold water, cover with hot water and simmer in a saucepan for 30 minutes.
Add rice to the lentil until cooked.
Fry the onion with oil till honey colour.
When the lentils are cooked add the onion with the oil, add salt and lemon juice and simmer for a further five minutes.
Serve with olives and crusty bread.
